This is lunch flipped on its head: the champagne chooses the food. Four small grower houses pour rare rosé de saignée and blanc de noirs, each glass matched to a dish by chef Charles Fourreau. Smoked salmon meets Pinot Noir from Sézannais, beef fillet dances with a precise rosé, and dessert gets an unexpected Ratafia twist.
