This is Roman pinsa, not pizza: an oval flatbread made with rice, soy and wheat flour imported from Rome, puffy and crisp-edged with a soft center. You get a pizza wheel to slice it yourself, and toppings range from classic Margherita to Pecorino crema with artichokes and bottarga.
